Vegan Meal #2

This week I made pesto, spinach and mushroom, quinoa pasta with my girlfriend!

This pasta recipe was one found by my girlfriend on Instagram. I have started following a multitude of vegan meal pages on Instagram. I find that it not only has allowed me to explore new meal ideas but also allows for the reminder to eat vegan meals. These meals have allowed me to know what are proper vegan meal replacements so that I am not missing out on the nutrients I require.

This quinoa pasta is also gluten-free. I have been finding it rather easy to find vegetarian options as well as gluten-free. These meal options are rather expensive but well worth it.

This meal took only 30 minutes to prepare, the ingredients include:

  • Garlic
  • Quinoa pasta
  • Spinach
  • Mushrooms
  • Vegan margarine
  • Pesto
